You will gain a comprehensive understanding of areas such as meat, fish & shellfish, soups, sauces, pastry, bread and a competent understanding of foundation level cookery.
There will also be theory time where menu planning, working to budget, and provisioning will be covered. As we are in the heart of Palma de Mallorca, a market visit will also be included to look at fresh fish and how to select correctly different cuts of meat and more.
This course works to a syllabus of Level 1 in Food Preparation and Cooking.
This course covers all the basic duties to become a chef, from maintaining a safe place of work to preparing and baking food items; students are taught the fundamentals about catering and are assessed over 9 units:
Maintain a safe, hygienic and secure working environment.
Contribute to effective teamwork.
Maintain food safety when storing, preparing and cooking food.
Prepare and cook meat and poultry.
Prepare and cook pasta.
Prepare and cook rice.
Cook and finish simple bread and dough products.
There will be theoretical assessments and on-going practical assessments throughout the course. All theory and practical assessments must be successfully completed to achieve the completion certification.
